Sassicaia 2021 – Bolgheri Sassicaia DOC

  • Grape Varieties: 85% Cabernet Sauvignon, 15% Cabernet Franc.

  • Training System: Spurred cordon.

  • Soil: Predominantly calcareous soils rich in galestro (schistous clay) and stones, with some clay content.

  • Altitude: Vineyards situated between 100 and 300 meters above sea level, facing west/southwest.

  • Vine Age: Approximately 20–40 years.

  • Harvest: Manual selection of grapes.

  • Vinification: Grapes underwent careful sorting to remove any impurities or imperfections. Gentle pressing and delicate destemming were performed to preserve the integrity of the berries and prevent excessive tannin extraction. Alcoholic fermentation occurred spontaneously without the addition of external yeasts, concluding by mid-October at controlled temperatures not exceeding 26–27°C. Frequent délestage and open-air pump-overs facilitated optimal aromatic extraction and maintained freshness in terms of acidity. Malolactic fermentation, also spontaneous, was completed in stainless steel tanks by the end of November.

  • Maturation: The wine was aged for approximately 25 months in French oak barriques, with a composition of 40% new wood, 40% first passage, and 20% second passage. Following barrel aging, the wine underwent light clarification and oxygenation before final blending and bottling, which commenced in mid-January 2024. The wine was then further refined in the bottle before release.

  • Tasting Notes: Deep purple-red color with violet reflections. The nose offers notes of aromatic herbs and spices, combined with hints of red fruits, underbrush, rose, and elegant wood nuances. On the palate, it is well-structured, with a touch of acidity that imparts energy and liveliness, and perfectly integrated tannins that provide volume. The finish is long and complex.

  • Alcohol Content: Approximately 14% ABV.

  • Serving Temperature: 18–20°C.

  • Food Pairing: Pairs well with various meats and fine game dishes.
